Former White House Chef, Edwin Scholly, brings flavor to NCFL

GAINESVILLE, Fla. (WCJB) - After cooking in the White House during four different presidencies, Edwin Scholly is now the Executive Chef at The Village at Gainesville.

Scholly cooked for George H. W. Bush, Bill Clinton, George W. Bush, and Barack Obama during his 30 years in the White House.

“I’d do it all over again I have no regrets,” Scholly said. “It took a huge team. Before we put out a meal everything has to be researched, done, and supplemented. It’s a long list.”

Fresh ingredients are key when making a good meal, according to Scholly.

“I was born in Europe so farm to table,” Scholly said. “Anything fresh, anything seasonal makes my heart sing.”

After years of traveling and being on the go, Scholly has been serving up his talents at The Village at Gainesville for close to a year now.

“We are an establishment with one of the best kitchens around,” said Scholly. “100 percent fresh is what we do so we have a crew that keeps busy all day.”

One of his go-to fresh snacks to make are fresh power bites, which he said are easy to prepare and take on the go:

Cranberry Pistachio Bites

1 Cup dates, finely chopped

1/3 Cup honey

1 Tablespoon pepitas seeds

1 ½ Cup oats, uncooked

1 Cup pistachio, shelled

1 Cup dried cranberries

½ Cup dark chocolate nibs

¼ Cup shredded coconut

Pinch kosher salt

Combine dates, honey, pepitas, and salt in a food processor and pulse until smooth and well mixed. Transfer to a large bowl and stir in oats, pistachios, cranberries, dark chocolate, and shredded coconut until evenly mixed. Cover and allow to rest for a minimum of one hour. Spoon out desired size, a small cookie scoop works great, roll to the desired size. Store in the refrigerator.
